A naughty little treat……..
go on, you know you want to!You will need; 175g /6 oz butter, plus extra for greasing 3 tbsp cocoa powder 200g/7 oz caster sugar 2 eggs, lightly beaten 125g/41/2 oz plain flour Cheesecake mix 250g/9 oz ricotta cheese 40g/11/2 oz caster sugar 1 egg
Preheat the oven to 180c/350F/Gas mark 4. Grease a 28 x 18 cm rectangular baking tin. Place the butter in a saucepan and heat gently until melted. Remove from the heat and stir in the cocoa and sugar. Beat in the eggs, add the flour and stir to mix evenly. Pour into the tin.
For the cheesecake mix, place the ricotta, sugar and egg in a bowl and beat together, then drop teaspoonfuls of the mixture over the chocolate mixture. Use a palette knife to swirl the mixtures together lightly.
Bake in a preheated oven for 40 – 45 minutes, or until just firm to the touch. Leave to cool in the tin , then cut into rectangles.
Best served along side a nice cup of tea.
