Homemade burgers with fat chips

My homemade beef burgers with fat chips are the perfect Friday night meal.  Forgive me for not using exact measurements,  when cooking savoury dishes I’m a big fan of experimenting and tend to just chuck this and that in, Jamie Oliver style.   You can adapt this recipe to suit your own tastes or by adding whatever needs using up in the kitchen.  For example, use leftover fresh herbs or substitute your beef mince for lamb mince and your Cheddar for feta.

Burgers

You will need:

For the burgers

500g beef mince
Handful of cheddar cheese
Dash of worstershire sauce
Handful of breadcrumbs (fresh or dried)
1 egg, whisked
Handful coriander, finely chopped
Salt and pepper
 

Place all of the ingredients in to a bowl and combine with your hands so that everything is evenly distributed.  Divide the  mixture in to 4-6 balls, use your hands to roll.  Place on a baking tray and flatten with the palm of your hand, the burgers should be about an inch thick.   Cook under a preheated grill fro 20- 25 minutes, turning once.  If you want to add cheese, place on top of the burgers and cook for a couple of minutes more until melted.  Slice you burger buns in half, I like to add a slither of mayo and some salad to the bottom of my burger. Place the burger on top and top with some fried onions, bacon, ketchup or whatever you desire.   Serve withyour fat chips, I love a couple of gherkins on the side too.

Fat chips

You will need:

For the fat chips

3-4 large white potatoes, peeled
1 tsp Salt
Handful of fresh chopped parsley(or tbsp dried)
1 garlic clove sliced (optional)
2 tbsp vegetable oil
 

Preheat the oven to 180C.

Prepare your chips, depending on the size of your potato cut it into 3 pieces and then cut each piece in to 3 again, lengthways.  Place them into a pan of boiling water and let them bubble away for 5 mins.  Drain and put to one side.  Take a deep baking tray and add the vegetable oil, place the tray in the oven for 10 minutes until hot.  Toss the chips in the parsley, salt and garlic if using.  Remove the tray from the oven and stand well back and add the chips, be careful the oil my spit.   Place the chips in to the oven for roughly 50 minutes – 1hour, turning occasionally.  Keep an eye on them so that they don’t burn, they should be a deep golden colour when cooked.
