These iced biscuits taste sweet and delicious! They make perfect gifts for loved ones, especially if you personalise them with your own decoration. Gorgeous!
225g (8 oz) plain flour, plus extra for dusting
150g (5 1/2 oz) butter, cut into small peices, plus extra for greasing
125g (4 1/2 oz) caster sugar, plus extra for dusting
1 tsp vanilla extract
Preheat the oven to 180C/350F/Gas Mark 4. Grease a large baking sheet. Sift the flour into a large bowl, add the butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar and vanilla extract and mix together to form a firm dough.
Roll out the dough on a lightly floured surface until it is about 1 cm thick. Cut out 12 hearts with a heart shaped biscuit cutter and arrange the hearts on a baking sheet.
Bake in the preheated oven for 15-20 minutes, or until just coloured. Transfer to a wire rack and leave to cool completely.
To make up the icing sieve the icing sugar into a bowl and mix the lemon juice in gradually. Stir until you have a nice thick icing that is still pliable. Divide the icing into a few bowls and add a drop of food colouring to each one (different colours, obviously) Stir and add to your biscuits using a small blob and the back of a spoon. You can add writing and any other decoration using the other coloured icing. You could try scattering over some sprinkles or edible glitter. The design is up to you!
